Essentially, I am a sucker for rose, which I did not truly understand until date night rolled around and we tried some rose gelato. That gelato reminded me of this tea in wide ways, and good news is that I love them both.

The amber liquor of the brew is has a fantasy appeal, reminding me of a smooth and hintingly creamy drink with a viscosity of pure water. A nutty aroma given off by the leaves post-steep is darling, and well fitting to the cup. There's also a warm, fresh cut garden aroma that glides up with the steamy evaporation. RECIPE: White Chocolate Chai Tea Spiced S'mores

Yum! Vickie tested this recipe over the weekend, and brought in a batch for Coffeewiz staff to sample. It passed the "yummy" test, so here it is for you to enjoy:

White Chocolate Chai Tea Spiced S'mores

Cook Time:10 min
Level: Easy
Yield: 24 s'mores

Ingredients
8 ounces white baking chocolate, finely chopped
3/4 cup cream
1 TBSP Tavalon Kama Chai Sutra loose tea
16 honey graham cracker squares (2 1/2-inch squares)
1 1/2 cups mini marshmallows, or 24 large marshmallows

Directions
Put chopped white chocolate in heatproof bowl.

Put milk in a small saucepan and bring to simmer over medium heat. Add
loose chai tea, stir, remove from heat and let stand 10 minutes. Return the
chai tea-infused cream to medium heat until just simmering.

Pour the chai tea-infused cream through a fine mesh strainer set over the bowl of chocolate. Shake the bowl to evenly distribute the cream and let stand 5 minutes to melt the chocolate.

Stir until very smooth and let the chocolate cool to room temperature. Discard the loose tea
leaves.

To make the s'mores in the oven, set an oven rack 6 to 8 inches from the broiler and preheat.

Put 8 graham cracker squares on a baking sheet and spread 1/2 teaspoon of the cooled chocolate over the entire surface of each square.

Arrange mini marshmallows (or place 1 whole marshmallow) on each chocolate covered graham, being sure to cover the cracker completely.

Spread about 1/2 teaspoon of the chocolate on each remaining graham
crackers and set them aside.

Transfer the pan to the oven and toast the marshmallows under the broiler until
deep golden brown, about 30 seconds. Keep an eye on the marshmallows - they toast very quickly!

Remove the chai tea s'mores from the oven and top with the chocolate covered grahams,
chocolate side down. Press lightly to spread the chocolate to the edges.

Let the s'mores cool for 1 to 2 minutes before munching away!

Note: You can store the unused white chocolate chai tea sauce in an airtight container
in the refrigerator for up to a week. You can melt and pour over ice cream
or stirred into hot milk for chai-tea spiced hot chocolate!

Coffeewiz, single serve coffee and gourmet loose leaf tea online retailer, announces winners of Facebook Photo & Video Contest, “Unpack the Magic.”

Coffeewiz, a New Jersey-based single serve coffee and gourmet loose leaf tea online retailer, announces winners of its first ever Facebook Contest entitled “Unpack the Magic.” Two Facebook contest winners were selected by Coffeewiz staff, one winner for each photo and video category.

The contest ran for a limited time from February 21, 2010 through March 21^st, 2010. The two winners each receive a $100 Coffeewiz gift certificate.

The Facebook contest winner in the video category is Jennifer Staresina of Indiana, who entered a video of her toddler, Lucy, demonstrating the ease of making a single serve coffee. In the video, Lucy pushes two stools up to the kitchen counter to reach the single serve brewer, and then presses a button to brew a cup of coffee for her mother. She also plays with boxes of unopened K-cups in the unpacked Coffeewiz shipment. “We had fun,” Staresina jubilantly says, “Miss Lucy can’t get enough of watching herself in the video.”

The photo contest winner is Melissa Powers of California, who entered a photo of the K-cup cabinet her husband built to contain her K-cups at her single serve brewing station. There is a coffee cake in front of the single serve brewer where Powers made the Dark Magic Coffee that she substituted for water in the recipe. By the time she returns to the kitchen, a slice of cake has already been taken by a family member. When Powers was announced as the photo contest entry, she glowingly states, “Since the economy crashed, Coffee has become a bit of a luxury. This is truly a gift and I never expected to win. I am unbelievably excited. Maybe I’ll try something new.”

The Facebook contest sought to reward creativity in showing how entrants “Unpack the Magic,” of Coffeewiz in their home or office. Entrants were encouraged to include friends, family or pets to tell the story of how they brew their favorite coffee or tea.

How to Make Turkish Tea - Turkey - The #1 Tea Consuming Country!

Turkey is the number consumer of tea in the world, per capita (Source: Wikipedia, 1/09). As popular as drinking Turkish Coffee, Turkish Tea is a very distinct drinking experience, drunk in in a very unique way.

The Turks do not drink their tea in ceramic mugs, or brew it the convenient single serve way. It is servcd strong, black and steaming hot in small, tulip-shaped glasses called 'ince belli.' The Turks serve multiple glasses of the red-colored tea. Also, tea houses are customary in parks and public spaces. The tea house is going through a transformation to more trendy tea pubs.

Turkish Tea is both brewed and drunk in Turkey similar to Russian Tea, moreso than the English or Chinese enjoy their tea. Both Turkey and Russia brew tea in a a samovar – a brass water boiler that is charcoal fueled, using rich black tea. Both cultures brew tea for fifteen minutes or more and then mix it with very hot, but not boiling, water to lighten it to taste. They then sweeten it with sugar to taste, but never add honey or milk to their glass tea cup. The Turkish and Russian cultures also both drink their tea in small, thin glasses, rather than ceramic or porcelain cups.

History of Tea Drinking in Turkey

Tea drinking in Turkey actually dates back to the 1600s. According to one legend, Back then, coffeehouses had quickly become places where men would gather to drink coffee, puff on hookahs, play their table games like tabli, and discuss the day's affairs.

After a series of fires caused by hookahs swept through the land around 1633, all the coffeehouses were ordered to be closed by an angry sultan. The Turks switched to tea as an alternative, and became quite fond of the substitute.

How To Make Turkish Tea

Prepare a small teapot by adding about one heaping teaspoon of full-bodied, rich black tea per cup (Kings English Breakfast Black Tea, Kings Dimbulla Black Tea, Jaf Majestic Ceylon Pekoe Black Tea work very well).

Boil about 1 cup of water per cup of tea on a stove top or in a samovar.

Pour HALF of the steaming water into the teapot. Let it steep for at least 15 minutes, keeping both the teapot and the remaining water piping hot.

Pour the tea into a small glass cup, or ince belli, about halfway. Add the water to fill the remainder, with sugar to taste. But remember that the Turks never add milk or honey!

While the U.S. is #20 in worldwide tea consumption, as a melting pot of cultures, many like to enjoy a new brew, or at least learn how another culture might enjoy theirs. It helps us appreciate our own culture and the luxury of having so much variety available to us all!

For Tea Time Tuesday, we shot this new video for you single serve coffee fans...

If you are a K-Cup fan and have a Keurig brewer, it's very simple to make your own loose leaf tea brew. Coffeewiz has a delectable assortment variety of loose leaf tea and now wants to show you a very elegant simple solution for enjoying the experience of your own whole leaf tea personal brew.

This month, I have been sampling the loose leaf tea product line that Coffeewiz carries on their website. I tested the Coffeewiz Glass Tea Cup With Glass Strainer in the Keurig Home Brewer.

I brewed the Kings Earl Grey loose leaf tea in the glass tea cup, and pressed the large cup button. I am mainly avid coffee drinker, and a single serve fan, with both a Keurig and Tassimo brewer at home, but I like to keep an open mind and try something new - a little variety.

The Keurig dispensed the perfect amount for a single serve cup. Although the aroma of the fresh loose leaf brew was intoxicating, I closed the glass tea cup with the glass cover and let the brew steep for a minute, as I like my tea on the lighter side. But you can brew the tea to your personal taste - it's your choice.

I then took the glass tea strainer out of the glass and a perfect cup of loose leaf tea remained, with the leaves unfurled in the strainer. I saw lavender blossoms on top of the green tea leaves. While it was a beautiful sight, I prefer to keep my leaves separate from the tea I drink, so the strainer is a nice solution. The strainer has tiny glass slits that allow the water to pass, but keep the leaves behind in the neat little strainer.

Just an update from a recent memo we received from Timothy's Customer Service Department:

Timothy’s recently conducted a thorough review of their K-Cups product-line and after careful consideration, Decaffeinated French Vanilla, Decaffeinated Green Tea, and Emeril’s Organic French Quarter Roast will be discontinued.

Decaffeinated Green Tea and Emeril’s Organic French Quarter Roast K-Cups will be phased out over the next two months, with production ending by April.

Please note, however, that there is limited inventory of Timothy’s Decaffeinated French Vanilla K-Cups and these will be phased out, effective immediately.

VIDEO: Ethiopian Coffee Ceremony

There is so much to talk about in the world of coffee...In my social media role, I get to learn about all of the coffee and tea you can find at Coffeewiz, and then share a conversation with you about it. I was told that if I had one for every day of the year, I still wouldn't be able to try them all!

Before I choose my daily single serve cup of coffee, or daily whole loose leaf tea brew, I wonder where it came from. I know it didn't grow on a single serve tree!

I'm fascinated with cultures and ceremonies that countries have for their specific brew. Understanding them helps me appreciate the experience so much more, and I want to share just a little bit of that with you.

Just the other day as I was brewing a Caribou Sumatra Coffee K-Cups in my Keurig brewer, I asked my husband, "Where is Sumatra?" wanting to start a conversation. He said "I took it to work." What he was thinking of was the Tassimo Starbucks Africa Kitamu T-Discs, the package that he had taken for his office coffee pool. I was surprised to learn that Sumatra and Africa were all the same to him! He just knew they referred to a coffee and came in a box, ready to brew. And as I thought about it, I wasn’t quite sure I could point out Sumatra on a map…

So with that, I thought I'd share with you cultures from around the world, both coffee and tea - the STORY behind your favorite brew.

I was introduced to the Ethiopian coffee ceremony experience about 7 years ago, and fell in love with the food, too. It's definitely a culture of community, as you'll see in this video. Beans are ground by hand, and family and friends wait patiently. It is an HONOR to be invited! I am entranced everytime the server brings around a pan of freshly roasted beans for us to just smell. Imagine, getting the chance to put in an extra step and actually take time to smell the coffee – just as if they were like roses.

Did you see the goat at the opening of the video? I always loved the story of coffee was discovered in Ethiopia, when the goats would get their caffeine fix on, and the herder realized there was magic in them there coffee beans!

I thought Andrew Zimmern did a good representation of the exotic Ethiopian coffee ceremony. I know firsthand that it's very different than what you would experience with the touch of a button, and brew of a single serve coffee.

I hope that taking a peek into cultures around the world will make your single serve coffee and tea a much richer experience.

The Cafe Au Lait equation is pretty simple -

And even if you have never tasted a beignet from the famous French Quarter Cafe Du Monde, maybe this easy single serve cafe au lait coffee recipe will capture some of the fun the city is celebration right now with Mardis Gras in the city of New Orleans.

Maybe you have a preference - you can make the coffee lighter- add more milk or darker- add less milk. Do you like your coffee weaker? Just add hot water.

Brewing Loose Leaf Tea - A Coffeewiz Homework assignment!

I was sent on my first Coffeewiz homework assignment - to brew my own cup of loose leaf tea. I am a coffee lover first, but I enjoy a good cup of tea, too. I am going to be trying alot of the products that we carry and capturing video (and our staff, will be trying it too!). I look forward to bringing you behind the scenes here at Coffeewiz, and bringing the staff who makes all the magic happen to YOU.

After watching Yingci brew loose leaf green tea in a Chinese Tea Cup, and putting up the video on the YouTube, I was ready to see if I could do it, too. I never really brewed loose leaf tea from scratch. I've only had green tea if it was brewed in a the Keurig machin e, if it was in a tea bag, or at a sushi restaurant (I LOVE sushi!). Well I was going to find out!

I sampled a loose green tea, Jaf Green Tea Gunpowder Tea using a mesh tea ball infuser.

I filled the mesh tea ball infuser about a third full, because I knew that gunpowder tea would swell, and unravel into whole green tea leaves. This tea wasn't a shredded variety.

Now, I enjoy a strong brew and a more woody green flavor to my teas. No sugar. I find that its often watered down at the sushi restaurant, and I'm not sure how it's prepared.

The tea brewing process was fun - it wasn't hard at all, and I felt that the experience of brewing whole leaf tea myself actually made it more enjoyable.

I really enjoyed not only drinking this tea, with its rich green flavor, but I really liked seeing the whole green tea leaves when I poured it out in a plate from the mesh tea ball infuser.

AND, I will tell you that after shooting this video last night, and then going out for sushi dinner, I think I'm going to turn into a tea snob...My tea tasted so much better!

So I give it a definite thumbs up, and am sitting here with another cup of brewed tea at my desk. So, maybe that homework just did turn me into a whole leaf tea convert! :)

Tea Musing: The tea drinker’s cheat sheet
Tea Musings No Comments » I recently reflected on my tea drinking and how much it has evolved over the last few years. There was a time long ago in my shameful past when I thought the low-grade tea dust found in your average tea bag was all that was available to tea drinkers. Now, many years later, after having explored more fully the world that is tea and having reviewed over 300 teas for Teaviews, I realize that one could reasonably spend a lifetime devoted to exploring tea and trying every variety out there. Thus, I also realize that for many people, getting into tea could become overwhelming. Add in the increasing number of tea vendors and you could make yourself dizzy trying to figure out what you want and where to get it from. For that reason, I am briefly summarizing what I consider to be some of the best tea options out there. This summary is intended to provide some suggestions to readers interested in exploring more tea types and making new purchases. What follows is all in my humble opinion, and in no way is an endorsement by Teaviews of any particular tea or retailer. And of course, this is not an all-inclusive list, as I am sure that I will have accidentally omitted a retailer or two.

Expanding your horizons: Once you’ve got the hang of tea and you’ve cleared off some shelf space for a greater variety of tea, there are several tea retailers worth checking out. Specialteas, Teas Etc., David’s Tea, TeaFrog, Teavana and Tea Gschwendner each offer a respectable variety of black, green, oolong, white, herbal, and flavored teas. Many of these routinely offer special discounts, free samples, and/or free shipping on large orders. From my experience, these retailers also offer reasonably priced teas, so that you can order lots of different items, and even if one ends up not being your favorite, you didn’t have to break the bank to buy it, so it’s no huge loss.

Selecting superior teas: Tea is a lot like wine or beer. We’ve all thrown back the $5 bottle of cheapo table wine and thought it tasted just fine. But once you’ve tasted the good stuff, the cheaper, more accessible stuff suddenly becomes a lot less desirable. So if you’re ready to start drinking teas that excel in quality, I would recommend you check out any of the following: Zhi Tea, California Tea House, American Tea House (formerly Le Palais Gourmet), Jing Tea, and Teatulia. Many of these vendors have less variety than other tea retailers, but the products they offer are top of the line. Of course, you can expect prices for some (but not all) of these teas to be a bit higher than prices from other vendors, but the saying “you get what you pay for” often rings true in the world of tea (although I will note that some of the best teas I’ve had were very inexpensive while conversely some rather expensive teas failed to meet my expectations).

Finding your niche: Once you’ve dabbled in black tea, experimented with white tea, de-stressed with herbal teas, and so on, you’ve probably figured out what types of tea best suit you. And to that end, you may be seeking out more offerings of your favorite tea type. Green tea lovers should give Maeda-en a try. If oolong is your thing, be sure to check out Naivetea. Herbal tea lovers will be quite pleased with the offerings from Specialteas and TeaGuys. Flavored teas, particularly original blends, are the strong point of The Necessiteas. Darjeeling lovers need look no further than Thunderbolt tea. Chai lovers can find every imaginable blend at Yogic Chai, but Indonique and Adagio also offer some high-quality chai blends. TeaGschwendner, Zhi, and Mighty Leaf all offer some great takes on white tea.

The Bottom Line
As with almost anything in life, drinking tea can be as simple or as complicated as you want it to be. If you, like me, have a passion for this stuff, you’ll want to explore every aspect of tea and sample as much as possible. To that end, I hope this little guide has been helpful and perhaps inspired you to purchase a new tea or two.

Peet's to buy Diedrich Coffee for $212 mln

Nov 2 (Reuters) - Gourmet coffee chain Peet's Coffee & Tea Inc (PEET.O) agreed to buy Diedrich Coffee Inc (DDRX.O) in a $212 million cash-and-stock deal, to enter the fast growing single-cup coffee market.

The deal values Diedrich at $26 a share, a premium of 28 percent over its Monday closing price of $20.36.

Diedrich, a wholesale coffee roaster and distributor, makes and sells K-Cup refills for Green Mountain Coffee Roasters Inc's (GMCR.O) single-cup Keurig brewer system through a licensing agreement.

Under the deal, Peet's will acquire Diedrich's portfolio of brands including Diedrich Coffee, Coffee People and the single-serve rights to the Gloria Jean's coffee brand.

Peet's said it will finance the acquisition through a combination of cash on hand and $140 million of debt financing.

The acquisition, expected to hurt earnings in 2010 and add to profit thereafter, is scheduled to close by the end of 2009.

How to De-scale Your Keurig Brewer

Many of our customers have asked this question so I decided to post the Keurig recommended process for de-scaling their coffee systems.

For Your Keurig Platimun, Special Edition, Ultra, and Elite brewing systems;

A. Prepare

Step 1: Make sure you have 48 ounces of white vinegar on hand. You will also need an
empty sink and a ceramic mug(Do not use a paper cup).

Step 2: Empty the water in the reservoir.

B. Fill And Clean

Step 1: Pour the vinegar into the Water Reservoir and fill it to the top edge of the clear viewing area.

Step 2: Place a ceramic cup into the Drip Tray and run a brew cycle. DO NOT USE A
K-CUP....Just press the Large Cup Button. Pour the contents of the cup into
the sink.

Step 3: Repeat the brew process until the Water Reservoir is empty, pouring the
contents of the cup into the sink after each cycle.

Step 4: Now fill the contents of the reservoir with fresh water and let the brewer stand for 4 hours while still on.

C. Rinse

Step 1: Ensure the Water Reservoir is filled with fresh water.

Step 2: Place a ceramic cup on the Drip Tray and run a regular brew cycle. Pour the
contents of the cup into the sink.

Step 3: Repeat the brew process until the water reservoir is empty.

Step 4: You may need to perform additional brew cycles if you notice any additional.

Why does my tea taste bitter

There are several reasons that tea can be bitter. It can be can be related to the water, the brewing time, the cleanliness of your teapot, and even the tea itself.
The chemical that makes tea bitter is called tannin. It’s a chemical compound with an astringent quality. It has a drying effect and is the element that can make your mouth pucker when you drink tea. The tannin is released when you put hot water on the tea leaves. To prevent your tea from being bitter, you need to minimize the amount of tannin released into the tea you drink. Here are some factors to consider.
The tea: the first thing you want to consider is the quality and type of tea you are brewing. Teabags are usually made from the “fannings” and dust of the tea that has been processed in larger pieces for loose leaf packaging. Smaller pieces make a larger overall surface area for the tea to release tannins from. In other words, you will get more tannin per second from teabags than from loose tea. Furthermore, the tiny pieces expose more surface area to the air during storage, making it more vulnerable to getting stale faster. In addition, many teabags are often made with inferior quality tea to begin with.
Cleanliness: Did you ever notice those brownish stains on the inside of your teapot? That’s traces of tannin. If you let it build up, it will eventually start to affect the flavor of your tea. To prevent this, rinse out your teapot with warm water as soon as it’s empty. After it’s cooled, wash it inside and out with baking soda on the corner of a washcloth. Soaps can leave a lingering residue that affect the taste of your tea, but baking soda rinses clean and is the natural enemy of tannin since it is alkaline. Use the brush for cleaning the nipples on baby bottles to get down into the spout and clean it.
The water: Taste the water you are using to make your tea. If you wouldn’t drink it, don’t make your tea with it. You can use a good spring or filtered water, but don’t use one that is distilled. Distilled water has an absence of minerals altogether and will make you tea taste flat like pasta does when you cook it without salt.
The brewing temperature: No this is a tricky bit here. In general you brew black teas with water that has come to a “full rolling boil” and green or white teas at 140o to 175o F. But. There are some teas that don’t follow that general rule, so read the label on the tea container and follow the directions recommended by the tea company. They want their tea to taste as good as possible so their directions are probably going to be right.
The amount of tea used: This is another tricky one. In general you want one teaspoon or one teabag of tea for each six fluid ounces of hot water used. Measure how many ounces your teapot or teacup holds then divide the number by six. That will tell you how many teaspoons of tea to use. However, some teas need a little more or less, so, again, read the box or the tin and see what the company recommends. Also, if this proportion doesn’t taste strong enough to you, don’t increase the amount of tea. Buy a stronger tea to begin with such as a nice Assam. They’re naturally stronger and richer in flavor.
The brewing time: Now we get to the number one factor in bitter tea—the brewing time. The longer the tea steeps, the more tannin is released. Teabags have tiny pieces for quick brewing, which means the tannins are released much faster. Most teabags should be removed from the hot water within 40 to 60 seconds. Loose green tea should be removed in 1 to 3 minutes, black tea in 4, and oolong in 3 to 4. Herbal teas can steep as long as you like. They have no true tea in them and therefore no tannin. However, again, read the instructions on the box before you brew because some teas do not follow the standard rules.
If you use loose tea, you need to have a tea ball or an infuser or some other method of removing the leaves from the water before the tea turns bitter. If you use an infuser, you must use one large enough to let the leaves unfurl. The whole leaves have been curled and they need room to open. Some people find it better to use a large cheesecloth bag that can be washed without detergent and reused. It gives the tea more room. If you have neither an infuser nor a cheesecloth bag, you can decant the tea into another teapot using a tea strainer.

Green Mountain Coffee® has once again joined a nationwide effort to keep America's waterways clean. As a sponsor of American Rivers’ National River Cleanup™, employee volunteers will use paid time off to clean a section of the Winooski River from July 20-24, 2009.
Volunteers will pick up litter in and around a 5-mile stretch of the Winooski, from the Middlesex Dam to the Bolton Dam and beyond. They will use canoes donated by Umiak Outdoor Outfitters in Stowe to reach trash that is submerged.
This is the fifth year the Green Mountain Coffee brand has sponsored the national effort. Last year, heavy summer rains caused employees to shift their focus from the Winooski River to the Little River State Park and the nearby village of Hancock, where they helped families recover from extensive flood damage.
"We’re hoping for clearer skies this year,” says Paul Comey, Vice President of Environmental Affairs for Green Mountain Coffee Roasters, Inc. "We’re all anxious to get back on the river and do our part. National River Cleanup is one of our most popular employee volunteer opportunities.”

How Green Is Your Morning Coffee?

Many coffee drinkers go out of their way to get "fair trade" and "eco-friendly" coffee, but is that pricey jolt of joe really any better for the environment than the 75-cent paper cup of gut-rot from the corner deli?

After oil, coffee is the most traded commodity in the world. It's produced commercially on 25 million acres in 82 countries, and the United States consumes 8.7 million pounds of it annually, according to the Department of Agriculture.

But not all coffee should be treated equally.

In some parts of the world, forests — our first line of defense against global warming — are being cleared to increase the yield of the coffee crop.

Some types of coffee are produced under strict environmental or labor standards, but caffeine addicts have to pay more for them. The most common kinds are "Fair Trade," organic and "shade-grown" coffees.

Coffee grown with a Fair Trade certification helps ensure that farmers in developing countries are paid fairly for their toil and hopefully won't have to resort to unscrupulous growing practices detrimental to the environment.

Organic coffee is grown without the use of harmful pesticides or fertilizers, a green way to go for any crop.

Then there is shade-grown coffee. Otherwise known as "bird friendly" since it's helpful to migratory fowl, it's grown under canopy trees where the natural shade shelters the coffee plants during the growing season. This could be a win-win situation for growers and the environment.

"In Colombia, fruit trees are used to shade the coffee," says Mehlman. "This produces double yield for the same acreage, fruit and coffee."

Unfortunately, shade-grown coffee yields are lower than open-field sun cultivation, so the price is often higher. The increased demand for cheap coffee has resulted in the clearing of rainforests and an increase in the usage of chemicals and pesticides.

"Because it's such a staple in our lives, it's important to make smart choices to have a smart impact," says Carmen K. Iezzi, executive director of the Fair Trade Federation, the trade association that strengthens and promotes North American organizations that are fully committed to fair trade. "It's a holistic process; our members want to produce sustainably without compromising future generations' ability to grow."

Even if you decide to pay the extra for the java grown fairly and organically, there's another side to your morning coffee that keeps it from being green.

"We as a country use 23 billion paper coffee cups a year," explains Nicko Fusso of Sustainability Is Sexy, a Seattle-based non-profit organization devoted to getting as many coffee drinkers as possible to tote their own reusable cups.

"To make that many cups, we'll consume 9.4 million trees and 363 million gallons of water," adds Nicko. "That's enough energy to power 77,000 homes for a year."
With 150 million people drinking 3.1 cups per day, and many of those cups grabbed on-the-go, the number of single-use coffee cups going in the trash is staggering.
And paper coffee cups aren't about to go away.

"It's not the cup that's the problem, it's the habit," says Bob Lilienfeld, editor of The Use Less Stuff Report [http://use-less-stuff.com], a Rochester, Mich.-based online newsletter. "In one word, it's about convenience. We tend to move toward anything that makes it easier for us to save time and effort. But there is a cost."
At least one coffee-cup giant agrees.

"Every choice has a trade-off," explains Angie Gorman, director of communications for the Solo Cup Company, based in Highland Park, Ill. "You have an impact on the front end when manufacturing the cup, or at the end of that cup's useful life. Reducing waste is important, but a better way to reduce waste is to expand the country's composting and recycling infrastructure."

Still, Gorman insists there's a need for disposable coffee cups.

"Single-use cups offer a convenient and sanitary way to serve beverages to the public," she points out.

Lilienfeld doesn't dispute that.

"There are times when you have no other option, like at the theater or a ball game," he says. "You can't bring your own cup into these venues."

Cup manufacturers like Solo are working aggressively to find more sustainable solutions, such as increasing the use of post-consumer fiber when making the cups.

Most cups are lined with polyethylene, preventing them from being recycled, but new cups are being made of plant-based materials so they can be composted. The bad news is they'll only do so properly in a commercial composting facility.

Between the millions of acres being abused to grow our beans and the paper cups we carry around like trophies, how do can keep our morning coffee green?
Well, it begins with the coffee drinker.

"Consumers who enjoy convenience but want to make a difference can take two key actions," says Gorman. "First, they can understand the options in single-use food-service products, such as compostable, and their inherent trade-offs so informed choices can be made.

"Second, they can request that local restaurants collect recyclable and compostable materials and contact their community and state leaders to ask for their support of the expansion of recycling and commercial composting facilities."

Drinking coffee could reverse Alzheimers

Here is a artical I found from a University of South Florida Press Release. All of our Coffee Lovers should be thrilled with this news.

In what could be a ginormous boost to the coffee industry, scientists are saying that drinking five cups of coffee a day, could reverse memory problems associated with Alzheimer's disease.
The study- which was carried by University of South Florida researchers on mice who were exhibiting signs of dementia- also showed that caffeine helped slow the production of the protein plaques which show up in people who develop the disease. The scientists gave half the mice drinking water laced with caffeine equaling the amount found in about 5 cups of coffee. The other half got plain water.
They tested the mice two months later on memory and thinking, and the caffeinated mice did much better than their non-caffeinated test subjects. The brains of the caffeinated mice also showed a 50% reduction in the protein which creates the dementia. This is particularly exciting because currently there are no drugs that reverse the progression of Alzheimer's, only drugs that can slow it down.
All you tea drinkers; don't get too excited. Tea also offered a benefit from caffeine, but you'd have to drink 20 cups of the stuff to equal the benefits of coffee.

Authorize.net coffeewiz.com's payment service categorizes downtime events as 'a perfect storm'

Authorize.net has posted an explanation of what happened over the weekend to bring its services down. Users of the service can access the information from the 'Announcements' menu in the authorize.net dashboard.
In this document, they call the situation a "perfect storm" of events. The fire at Fisher Plaza happened late at night (11:10 pm PT on July 2nd) at the start of a long holiday weekend when many Authorize.net IT engineers were off on holiday, and it took time to get them all back to work the problem. The Seattle Fire Department wouldn't allow operation of the backup generators due to their proximity to the fire location, nor would they allow customers into the damaged building to access hardware. These factors were outside of Authorize.net's control.

Of more concern is the question of a back-up data center. Authorize.net states that they were approaching capacity of their current backup data center and they were in the midst of transitioning to a new one: a true "hot" site (in other words, real-time synchronization), so that the Authorize.Net platform could be switched from one data center to the other "on the fly." When the fire took out the primary data center, they attempted to fail over to the new, still-in-testing backup data center and encountered "a number of unanticipated errors." They offer no explanation as to why they tried to fail over to the new backup data center rather than the old (presumably well-tested) one.

Even as our engineering and operations teams continue to ensure normal operations, the postmortem process is already under way. We are examining all aspects of this outage and implementing steps to mitigate future risks. Over the next weeks, we will be completing the work to ensure that we have two fully functional, synchronized hot sites. Failing over from one to the other will occur in a matter of seconds. Steps are also being taken to ensure that we have the ability to implement emergency communication by distributing our voice, e-mail and Web capabilities across multiple sites.
Over the next days and weeks the postmortem will continue. Processes will be refined and further protections put into place.

While Monday morning quarterbacking is always easy, it seems like some mistakes were made in the handling of the backup data center. It's unclear if the old backup center was no longer live, or if the engineers just determined that the new one was 'ready enough' to fail over to. At the same time, having been in that kind of position, I know that the engineers were under tremendous pressure and were doing their best to come up with solutions which would get services back online as soon as possible. The more egregious issue is that Authorize.net didn't have other ways to keep in touch with customers. When the fire broke out, all the authorize.net websites went down. Eventually they opened a twitter account and for some time that was their only means of getting information out to the customers who were losing revenue as a result of the downtime.

Lemon Almond Iced Tea

This is a sparkling iced tea, with the unusual combination of lemon with almond and vanilla. You can use regular soda water, of you prefer less lemon flavor.

Ingredients;

6 Black Tea Kcup

3 lemons

1 Cup sugar (or substitute)

1 tbs almond extract

2 tsp vanilla extract

1 2-litre bottle of lemon carbonated drink

Ice Cubes

Preparations;

Brew Kcups into a sauce pan, and let it cool for 10 min. Cut lemon wedges and place in a large pitcher, giving them each a squeeze as you go, add ice cubes and sugar into pitcher, mix in cooled tea. Add flavorings and soda just before serving.

If you are not going to serve immediately, hold off on the extracts and lemon soda until then.

Can Anyone Explain Diedrich Coffee?

Had you invested $10,000 in Diedrich's Coffee two months ago, you'd be sitting on $640,000 or so.
Diedrich's closed at $0.38 on March 25th, and then promptly took off. And it hasn't stopped.
But why?
Well for starters, this company was tremendously undervalued as a penny stock. It hit a low of $0.21, making its P/B at the time a paltry 0.11.
But I'm not buying it at today's $23.49 closing price. I think it is far too risky.
They had one good quarter in the last 5 years. It happened to come in the middle of a Recession/Depression, so that get an A+ for that.
But could you have really seen that coming? Nah. I have a feeling that a return to mediocrity or worse could send this bad boy down 70% or more in just a few days.
Still a nice story for the shareholders though. I wouldn't mind paying cash for my next house thanks to a lucky penny stock :)
(And besides, there is so much bad news around here, it's nice to hear that some people are making a killing.)
All Star CAPS members are currently giving DDRX 33 Red thumbs to just 1 Green thumb. That should be enough for any Fool to think twice before plunging in. A look at the balance sheet should seal the deal.

Let's recap what Diedrich Coffee does here... they roast coffee beans and are a wholesaler for rare coffees. They are also one of the only four licensees to Keurig's K-Cups. Now I'm not saying with the K-Cup craze right now that their holding this honor of being 1 in 4 is a bad thing and worth zero, but this is absolutely ludicrous. What I think we need to do here is look at Diedrich's past to tell us all we ever wanted to know about the company.
